Zebra Cookies

Hello! We've been having very strange weather for Texas lately! It was cold and rainy yesterday, and we still have a bit of a chill in the air today. I thought it was supposed to be May! I'm not a fan of rainy weather in general, but it does give me a good excuse to stay in and bake! Finals are coming up and I have a lot of stressed friends in need of some baked goods. This first finals-time recipe is from a friend's mom, Zebra Cookies! They look awesome and taste like brownies, only in cookie form. :)
 
Zebra Cookies
Makes 2 dozen large cookies
Ingredients
  • 1/2 c. (one stick) butter
  • 3/4 c. cocoa
  • 2 c. sugar
  • 1/2 t. salt
  • 4 eggs
  • 1/2 t. vanilla
  • 2 c. flour
  • 2 t. baking powder
  • 1 c. powdered sugar
Before you start:Preheat your oven to 350 degrees and melt the butter
Recipe
Add cocoa and sugar to butter, then mix well.

Add eggs one at a time, beating after each addition with a fork.

Add vanilla, flour, baking powder and salt, and mix until combined. Refrigerate dough for at least 30 minutes.

Pour powdered sugar onto a small plate or shallow bowl. Roll generous spoonfuls of the dough into balls and coat with powdered sugar. Place on a baking sheet lined with parchment paper.

Bake for 10-12 minutes, or until the cookies are no longer shiny in the center. An inserted toothpick should come out clean.
