Tilapia with Orange Sauce

Hi! I hope your week is going well! :)

I made it to week 2 of the couch to 5k program! It's exciting to realize that, even if you've never done much running, you can manage this program. I definitely am a terrible runner, and yet I'm making progress - enjoying myself a little, even! :) 

Along with this, I'm trying to eat better. However, "healthy" for me does not mean stocking up on Lean Cuisine or going for the "diet" foods or subsisting entirely on celery and lettuce. I just can't do it! I have to have flavor and variety and food that tastes like food, not a manufactured version of itself. Maybe it's my love for sugar and fried foods?

So, I'm always looking for meals that are healthy but don't necessarily taste like it. :) Here's a perfect example! The orange sauce is so simple to make, and has a ton of flavor. Add some lemon pepper to your filet before you pan-sear it to maximize the citrus!

If you don't have tilapia, any white fish will work. I like getting the boneless filets in the freezer section so they last a while, and so that I can get several meals out of one purchase! Usually the filets are individually-packaged, making it really easy.


Tilapia with Orange Sauce
Serves 2
Ingredients
  • 1 t. butter
  • 1 t. all-purpose flour
  • 1/3 c. orange juice
  • 2 tilapia filets
  • Lemon pepper seasoning
  • Salt
  • Canola oil
Recipe
Melt butter in a saucepan over medium heat. Add the flour and whisk it in for one minute until cooked. 
Pour in the orange juice, and stir often until the sauce begins to thicken. Allow the sauce to simmer as you cook the fish - it should end up about the consistency of syrup.
Cover the tilapia filets with a light sprinkling of lemon pepper seasoning and salt.
Heat a tablespoon of canola oil at medium heat, then add the fish. Cook for about 4-5 minutes per side, until they start to brown slightly and turn flaky.
Serve the filets with the glaze spooned over the top.
